The red prawns (Aristeus antennatus) caught off the coast of Dénia, just 60 kilometers from Benidorm, are legendary. These deep-water prawns live at depths of 200 to 400 meters, which gives their flesh a firmer texture and a more concentrated, sweeter flavor than shallow-water varieties. The town of Dénia holds an annual festival celebrating this precious crustacean, and the finest restaurants in Spain compete for the first catch of the season.
