This remarkable open-faced toast features sobrasada — the soft, spreadable cured sausage from Mallorca — melted over toasted bread and finished with cheese and a drizzle of honey. The combination of spicy, garlicky sobrasada with sweet honey and gooey melted cheese is absolutely irresistible and unlike anything else on our menu.

The Unique Flavor of Sobrasada

Sobrasada is Mallorca’s most famous culinary export — a soft, spreadable cured sausage made from ground pork, paprika, salt, and spices, stuffed into natural casings and slowly air-dried. Its texture is smooth and almost paste-like, with a deep reddish-orange color and a flavor that is simultaneously spicy, smoky, and slightly sweet. At Taperia La Mina, we use authentic Mallorcan sobrasada, and when it is gently warmed over the toast, it becomes gloriously melty and fragrant.

The Cheese and Honey Finish

To complement the sobrasada, we add a layer of melted cheese — typically a mild, creamy Mahón cheese from Menzorrea or a local semi-cured goat’s cheese.
