The Cava Tradition

Cava is produced primarily in the Penedès region of Catalonia, where the Macabeo, Xarel·lo, and Parellada grape varieties create a sparkling wine with a character distinct from Champagne. The wine undergoes a second fermentation in the bottle, producing fine, persistent bubbles and developing complex flavors of toast, nuts, and brioche over time. The minimum aging requirement for a standard Cava is nine months, while Reserva and Gran Reserva cavas age for 18 and 30 months respectively, developing even greater complexity.

Cava is Spain’s default celebration wine, served at virtually every fiesta, wedding, and family gathering.
