The foundation of this toast is our slow-caramelized onion. We slice Spanish onions very thin and cook them low and slow in extra virgin olive oil for 30 to 40 minutes, until they turn a deep golden brown and become meltingly soft and intensely sweet. The natural sugars in the onion caramelize slowly, creating a jammy, deeply savory-sweet layer that pairs beautifully with the roasted peppers and the rich egg yolk.

Fire-Roasted Peppers

Our peppers are roasted over an open flame until the skin blisters and blackens, then peeled and sliced into tender strips. The roasting process concentrates the pepper’s natural sweetness and adds a subtle smokiness.
