At our restaurant in Benidorm, we make our Brava Sauce in-house using a closely guarded recipe that balances heat, smokiness, and tomato richness in perfect harmony.

The Secret of Salsa Brava

What makes a great brava sauce is the quality of its paprika. At Taperia La Mina, we use Pimentón de la Vera — the famous smoked paprika from Extremadura, Spain — which is cold-smoked over holm oak fires for up to 15 days. This gives the sauce its characteristic deep smokiness and earthy warmth. Combined with ripe tomatoes, garlic, a touch of cayenne, and a splash of sherry vinegar for acidity, our Brava Sauce delivers a complex, satisfying heat that enhances everything it touches.
